There has been a lot of hype around coconut water lately. Yet, this all natural beverage has been enjoyed by people around the world for thousands of years.

What is it that sets coconut water apart from other beverages on the market today?

1. Coconut water is rich in essential electrolytes.
Electrolytes are electrically charged ions that help your cells maintain and transmit voltages and impulses to and from other cells. Electrolytes play a vital role in your body, especially in maintaining proper functionality of your nerves, heart, and other muscles.

    My concern: Coconut shredded is used in curries in the coastal belts of India on a daily basis.

    In the list published by Dr. Dean Ornish's Programme for Reversing Heart Disease page 565 we are given the following information with respect to 1 cup of "Coconut: shredded, fresh, meat only": Equals 80 gms.277 Calories, Fat: 28.2 gms, Saturated Fat: 25 gms, Mono Fat: 1.7 gms, Poly Fat: 0.5 gms, Cholestrol: 0 gms.

    On page 250 of the said book we are informed that "Saturated fat increases your blood cholestrol level." on page 258, "In general, the more cholestrol and saturated fat you eat, the higher will be your blood cholestrol level and your blood pressure." And on page 280 in the case study of a "Crisco" packaged food in America (1990) we are informed that "...even though Crisco [like 'coconut, shredded, fresh meat only" in the present case] contains no cholesterol, your body will convert most of Crisco into blood cholestrol." We are told that on the "Reversal Diet" most people will be able to eat somewhere between 15 to 35 grams of total fat per day, or between 5 and 12 grams of saturated fat per day.

    My Question: How is it possible that "coconut meat, shredded etc" which contains one of the highest concentrations of saturated fat in the entire list of foods in the (american) book contains "zero grams of fat" and "zero grams of trans fat" when it is in the process of becoming meat as in coconut water?

    I was not able to read the article above due to the hindrance of advertisements which blocked the text partially on my right hand side.

    Sirs/Madams, Doctors, I would be grateful to you for enlightening me on the matter of concern, given that there is a huge coconut "economy' in the coastal areas of India, including Kerala and Goa.
